Grapes were harvested from September 10 to 20, 2011. A vegetative cycle of grapevines in 2011 was characterized by relatively warm spring and exceptionally dry and hot summer. In these circumstances top qualities bunches developed.

After harvest was done by hand, grapes were chilled. We pressed whole bunches and fermentation in Inox tanks on 15 degrees Celsius and ageing on lees (sur lie method) for 3 months without malolactic fermentation.
