Harvest and Growth Cycle of Grapevines

Grapes were harvested from September 20 to October 20, 2009. A vegetative cycle of grapevines was characterized with excellent schedule of rains in spring and dry and hot summer which resulted in the excellent quality of the harvested grapes.

After harvest was done by hand, best grapes were selected. Fermentation together with maceration in Inox fermentation vats lasted for 2 to 16 days, thereafter pressing and continuation of malolactic fermentation in large Slavonian oak barrels. After blending and selection of the best young wines, the ageing in large barrels continued for 10 to 14 months in large barrels. After the repeated selection of best barrels wine was blended in Inox and kept until bottling.

Wine was aged in Inox tanks and after 6 months of ageing bottled in 0.75 liter bottles and sealed with a natural cork. After bottling it aged another 3 months in the bottle.

It can be enjoyed now or kept. The wine shall continue its development in the bottle for minimum 5 years.
