Harvest and Growth Cycle of Grapevines

Grapes were harvested on September 18, 2012. A vegetative cycle of grapevines was characterized by relatively warm spring and exceptionally dry and hot summer. In these circumstances top qualities bunches developed. The harvest was executed in two takes with a selective picking of grape clusters.

After harvest was done by hand, best grapes were selected and chilled. We pressed whole bunches and macerated a portion of berries with a controlled temperature which is followed by maceration in Inox tanks on 17 degrees Celsius, ageing on lees (sur lie method) for 6 months without malolactic fermentation in big Slavonian oak barrels.

Wine was aged for 8 months in big wooden barrels and thereafter bottled in 0.75 liter bottles and sealed with a natural cork.

It can be enjoyed now or kept. The wine shall continue its development in the bottle for minimum 5 years.
