Harvest and Growth Cycle of Grapevines
From July 10 until October 2, 2012, a vegetative cycle of grapevines was characterized by extraordinary dry and hot summer. In these circumstances a regular number of top qualities bunches developed. The harvest was executed in two takes with a selective picking of grape clusters.
After harvest was done by hand, best grapes were selected and chilled. We pressed whole bunches and macerated a portion of berries with a controlled temperature which is followed by maceration in Inox tanks on 12 degrees Celsius, ageing on lees (sur lie method) for 8 months without malolactic fermentation.
It can be enjoyed now or kept in a cellar. The wine shall continue its development in the bottle for minimum 5 years.
The wine is greenish with the yellow reflection. On the palate a deep and delicate taste of green apple dominates as well as subtle minerality. A fresh, elegant, deeply structured wine with a lingering kiss of gentle bitterness. It is a wine in great shape. It is powerful, potent and rich – truly a wine for connoisseurs. To be served chilled at 10 to 12 degrees Celsius. Matching food included various pastas, white meat and fish as well as dry and cured meat. Alcohol is 13.4%.
